People around the world celebrate the birth of Lord Krishna with lot of joy and making a feast for him. No festival is complete without something sweet. Apart from his favorite Mohanbhog I made RASABALLI.

Rasaballi is an Odia dessert specially to the Kendrapada region. My memory of this cheese syrupy sweet dates back to my toddler days, when I used to go to Balijatra in Cuttack. Most probably I had it in Balijatra for the first time and every year I used to wait to satiate my craving for this sweetness.

Rasaballi is a combination of cheese balls soaked in creamy sugary syrup.

Recipe:

500 gms Chenna
1 lt milk
250 gms or to taste sugar
2 tsp of maida or all purpose flour
Oil for frying
Pinch of salt
Few strands of saffron
1 tsp Cardamom powder
Chopped Almonds

Method:

Knead the chenna with flour and salt till it becomes soft. Make balls, flatten it like dish and deep fry till it turns brown. Drain excess oil.

In a pan bring milk to boil. Simmer and let it reduce to 1/3rd. Add sugar and cardamom powder.Add saffron strands. Finally add cheese balls. Lets the cheese balls soak in the syrup. Serve Rasaballi at room temperature or chilled and garnish with some chopped almonds.

Its a very simple and easy recipe. Must try at home when there are guests or party at home or even when you have a sweet tooth.
