It is time to take out the snow boots, snow mittens, hats and winter coats.. Oh ya, the brutal long winter has arrived and we have had our first bout of 5 to 8 inches of snowfall yesterday. First snowfall of the year is always special, more beautiful, surreal and you feel like going out and play.


After spending hours outside with friends, when the kiddo comes in home she wanted to have something warm 🍲. What’s better than Chilli and some garlic bread on a cold, snowy winter day. Chilli is a spicy stew containing beans, ground meat, red and green peppers, tomatoes and seasoned with garlic and other spices and herbs.

Ingredients :

Ground Chicken – 1 cup
Kidney beans boiled – 1 cup
Celery stick – chopped
Onion – half diced
Green pepper – half diced
Red pepper – half diced
Tomatoes – 2 large pureed
Garlic – 2 to 3 cloves chopped
Chicken broth – 1 cup
Dried Oregano
Chilli powder
Curry powder
Chilli flakes
Black pepper freshly hand pound
salt
oil

Prep :

Heat oil in a skillet and add the ground chicken followed by some salt and black pepper powder. Fry it till its done. Take it out from the skillet and keep aside. Add 2 tbsp of oil in the same skillet. Toss in the chopped garlic, onion, green pepper, red pepper and celery. Saute it for about 3 mins. Add the chicken and then the boiled beans. Finally add the tomato puree and the broth. Season with oregano, chilli powder, curry powder, chilli flakes, black pepper and salt. Simmer it for about 30 minutes. It’s ready to serve now.

For Garlic Bread:
Store bought roasted garlic batard bread (also can use baguette bread).
Since our family likes the garlic flavor, before baking I brushed with a mixture of EVOO, crushed garlic, dried herbs mix, salt, freshly ground black pepper.
I sliced the bread and brushed both sides and baked it in the oven for 5 mins each side.
